Follow the Collio Trails, tracing the roots of its fine wines and rediscovering them in an exclusive menu by a local chef.

The wines will tell the story of Collio and of its land. A tale with a surprising ending: the Saturday dinner, where each wine will be paired with a typical local dish.

THE CHEF

CHIARA CANZONERI

The connection between her land of origin, Caorle, and her new home, Collio, is evident in her dishes: after years of experience on the Veneto coast and important national awards, since 2010 Chiara Canzoneri has settled in Gorizia, where she continues to explore Central European gastronomic culture, interpreted with a modern twist and enhanced by a careful selection of raw materials. Since 2019, she has been involved in training and promoting the region, including through events organised as a personal chef.

All of Collio in a wine glass

At the Enoteca di Cormòns, which brings together more than thirty wine cellars in the area, you will find all of Collio in a glass of wine: during an educational tasting led by Michele Paiano, AIS delegate for the province of Gorizia, you will be given an overview of the area’s wine heritage, through the pairing of three Collio DOC wines with three local products.

At the roots of tradition

At Borgo Gradis'ciutta, a winery in San Floriano del Collio, Robert Princic will do the honours, guiding you through a tasting of the family winery’s wines: the Ribolla gialla, Sauvignon and Chardonnay whites, the Collio bianco Bratinis and the red Cabernet Franc.

Wines beyond borders

In historic Oslavia, you will visit a winegrowing family that has been cultivating vineyards on its land for almost two centuries: the Radikon winery, part of the Ribolla Producers’ Association of Oslavia, preserves the winegrowing memory of this area, where Italy and Slovenia meet.

From Collio to the Upper Banks of the Isonzo

Founded in 1499, Tenuta Villanova is one of the oldest wineries in Friuli-Venezia Giulia; its vineyards descend from the Collio hills to the plains of the Isonzo, overlooking the Adriatic Sea. A natural heritage enhanced by the passion and expertise of the Grossi family.

THE SATURDAY DINNER

After an initial tasting session, Collio wines will be featured at the Saturday dinner in a menu prepared for the occasion by chef Chiara Canzoneri. The guests at the Saturday Dinner will be seated at a table framed by the shoots and green leaves of the vines, nestled in the Borgo Gradis'ciutta vineyard.
